EATS: EGG-OH!

After your New Year’s Eve adventures (let us know if you wound up finding your shoes…and the owner of that donkey) you now stand at a precipice. A wrong step could quickly get the new year sent down a path of irrevocable disaster. An even wrong-er step could do the same, but also be a helluva good time. Either way, breakfast is important. And if whipping up a bowl of Cinnamon Toast Crunch in the morning falls into the “ugh…so much work” category, be ashamed of yourself. Good news though: Josh Lewin, Executive Chef at Beacon Hill Bistro, has a solution for you. Listen up. Lazy.

STEP 1
Take a half-ounce of black tea, four cups of cider, and a tablespoon of fine sea salt and mix together. Put aside for brining. Grab 12 eggs. Stare ominously at them. They may think they know what’s coming, but they don’t.
Chef’s Note: “Do this once, and you have breakfast covered for a week.”

STEP 2
Boil the eggs for 5:15sec. Remove, and cool for at least five minutes in ice-water. Crack shells lightly with a spoon (no hammering), and place for 12-24 hours in the brine.
Chef’s Note: “I like a Carolina sweet tea for the brine. But I also like bourbon. Your pick.”

STEP 3
Remove from brine. The eggs will have a spider-web of the brine infused into the yolk, and when split in half the yolk will be gooey-firm. Top with fine sea salt and eat. Bring some into the office.
Chef’s Note: “They’re healthy, and can be used for everything from funky egg salads, or thrown on ramen like I do at the Beacon Hill Bistro”.

STEP 4
Oh yeah, Beacon Hill Bistro does ramen at lunch. Step 4 is to know that.

You put your body through a lot the other night. So put these simple items found at any grocery store through your body (or just on it), and cut the damn thing a break. For once.

Screen Shot 2014-01-03 at 12GINGER: Good for subduing vomiting and nausea, and active ingredient Gingerol has anti-bacterial, anti-inflammatory, and anti-tumor-promoting benefits. Tumors are bad.

CUCUMBER: Also anti-inflammatory (great for the un-swelling your eyes after a big night out), it cools the body down. Give it a try after your next bout of meat-sweats. Or lack-of-meat-sweats.

TUMERIC: Anti-septic and anti-bacterial, can be just as powerful as a Motrin. Caveat: no bottle. Bonus: it’s a liver detoxifier. You may need a lot of this.

GARLIC: Raw or aged garlic extract. Great for the heart, and calms coughing. Stop coughing so much.

APPLE CIDER VINEGAR: Antibiotic properties, soothes intestinal spasms. Those just sound uncomfortable.

CAYENNE PEPPER: Dilates blood vessels. And whatever that helps. What are we, doctors?
